You can eat peaches with every meal!

Suzy Powell, the American record holder in the discus, recently visited my husband and me at our home in Mammoth Lakes, along with her husband and some friends. They brought us a box of the most delicious peaches I have ever eaten. They all ripened at the same time, so we have been eating peaches with every meal. We have been dicing them in cereal, cottage cheese and guacamole, wrapping them in crepes and pairing them with cilantro on top of fish. One evening I wanted to make a cobbler for dessert, but settled on grilling some peaches instead since our grill was still hot from dinner. It turned out to be a delicious way to eat one of my favorite summer fruits.
2 peaches, pitted and halved
Olive oil for brushing
2 ounces of blue cheese
1 teaspoon honey or agave nectar
Heat grill to medium-high heat. Brush inside of peaches with olive oil and place flat side down on grill. Grill for four minutes and flip over. Crumble cheese in center of each peach half and grill for three more minutes. Remove from grill and drizzle with honey. The combination is delicious; but if you want a more traditional dessert, a grilled peach with a scoop of good-quality vanilla ice cream would also satisfy any sweet tooth.
There is a lot to be said for eating with the seasons, and peaches are in perfect ripeness right now. They are great when you are sweating more from running in the heat and offer you generous amounts of vitamins A and C, plus potassium and magnesium.
