Kitchen MacGyver: Immunity-Boosting Pineapple Mango Salsa

Summertime colds are the worst: Struggling with congestion and exhaustion when temperatures soar and sitting on the pool sidelines is the antithesis of awesomeness. Luckily, summer produce offers a bounty of immunity-boosting vitamins and minerals for warding off germs, and this incredibly versatile and healthful salsa provides a slew of immunity-boosting vitamins—including C, B1, E—and vitamin A, which may help protect the skin against collagen breakdown created by UV rays. This salsa also provides an all-natural, fresh alternative to bottled sauces that contain high fructose corn syrup, additives and preservatives, and is a tasty topper for grilled meats, tofu, fish, sausages and even a great add-in to salads, cous cous, rice or tacos.

Immunity-boosting Pineapple Mango Salsa  

1 ripe mango, diced

1 pineapple, grilled and diced

1 shallot, minced

1 tbsp cilantro, chopped

1 tsp toasted red pepper flakes

1 tsp sea salt

1/8 tsp garlic powder

1/8 tsp brown sugar

1/8 tsp smoked paprika

1/8 tsp ground ginger

1/8 tsp ground coriander

juice of ½ lime

Combine ingredients in a bowl and toss to combine.
